Maguey is a succulent plant, “though not a cactus,” and a member of the agave family. the leaves contain a lot of sap, which makes them good eating. the stalks are roasted and can be chewed and sucked on like sugarcane.

Guajillo is a mildly spicy pepper of only about 2,500 to 5,000 scoville units. it is often dried and made into a flavoring paste.

Poblano peppers take their name from the region they come from, Puebla, Mexico. They are very mild in flavor, not unlike bell peppers. Their large size makes them ideal for stuffing.
